Orange-olive oil cake | Moist, delicious, easy

Olive oil cake has been on my to-do list for a while. Kylie Jenner’s favorite olive oil cake has been trending for a while on TikTok. And since one of my subscribers on youtube suggested I make the orange cake I decided to make an orange-olive oil cake.

This orange-olive oil cake is super easy to make, it keeps fresh and moist for days and is perfect with a cup of coffee or tea. Doesn’t require very special ingredients and equipment.

Orange-olive oil cake Ingredients

In cups:

  • 2 large eggs
  • 1/2 cup greek yogurt
  • 1/2 cup good quality olive oil
  • 1/4 cup honey
  • 1/3 cup granulated sugar
  • zest from 2 oranges
  • juice from 1 orange
  • 1&1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 cup almond flour
  • 1 cup flour
  • cinnamon, vanilla,
  • orange blossom water

Metric measurements

  • 2 large eggs
  • 150 g greek yogurt
  • 120ml good quality olive oil
  • 85g honey
  • 65g granulated sugar
  • zest from 2 oranges
  • juice from 1 orange
  • 1&1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 50g almond flour
  • 120g flour
  • cinnamon, vanilla
  • orange blossom water

How to make orange-olive oil cake | Instructions

  1. Preheat oven to 350 degrees F (176-180 degrees Celsius). Grease a 23,5 x 12,7 cm (9 x 5 inches) loaf pan loaf pan or 23 cm (9 inches) cake round pan.
  2. In a large bowl, add your wet ingredients: eggs, honey, sugar, olive oil, yogurt, orange zest and orange juice, orange blossom water, vanilla. Mix everything very well until the batter is smooth and lump-free.
  3. In another bowl add almond flour, all-purpose flour, baking soda, salt and baking powder, cinnamon. Mix everything.
  4. Add the dry ingredients to the wet ingredients and mix until fully incorporated and the batter is lump-free. Make sure to not over mix the batter.
  5. At the bottom of the pan sprinkle some brown sugar and lay very thin orange slices. They must be thin!
  6. Pour batter into the prepared greased pan. Gently spread the batter evenly.
  7. Place the cake pan on the middle rack in the oven and bake for 30-34 minutes or until a toothpick inserted comes out clean. I covered the cake with aluminum foil for 20 minutes, then removed the aluminum foil and baked for an additional 15 minutes.
  8. Allow it to cool for at least 5 -7 minutes before inverting the cake onto a wire rack to finish cooling.
  9. Dust powdered sugar all over the top of the cake, if desired. Bon appétit!

Storage

This Orange Olive Oil cake will keep for 3-4 days in an airtight container in the fridge.

Nutritional Value

If you slice it to 8, one slice provides 321 calories, 19 grams of fat, 33 grams of carbohydrates, 6 grams of protein.
